Leo is a gastronomic concept created by Leonor Espinosa and Laura Hernández Espinosa that interprets Colombian identity through biodiversity, ecosystems, and their natural cycles.
Its proposal, CICLOBIOMA RESTAURAR, brings together cuisine, beverages, and storytelling to reveal how nature, communities, and ingredients interact with one another. Each experience reflects the country’s landscapes and the work of producers, gatherers, fishermen, and growers. La Sala de Laura represents Leo’s liquid universe, a beverage journey that explores Colombia through flavors, fermentations, distillates, and memories born from the territory.
